Crock Pot
Instant brown rice
Chicken
Frozen or fresh broccoli
Carrots
Seasonings
Cream of Chicken Soup or Cream of Mushroom Soup, preferably lower sodium and fat, such as Campbell’s Healthy Request
Step1
Put the chicken and carrots (either baby carrots or sliced carrots) in the crock pot and turn it on. Start it out on high, for at least the first hour or so. Add water to just cover the chicken.
Step2
When the crock pot is good and hot, about an hour, maybe less, add the soup and seasonings. Stir well and if you need more water, add a little.
Go about your day, or leave for work, with crock pot set on low if you will be gone all day, or you can leave it on high if you won’t be away long and want it to be ready sooner.
Step3
When you are almost ready to eat, add the broccoli. Do not add very cold food or liquid to a hot crock pot! Just put the broccoli in the microwave to bring it close to room temperature and then put it in the pot.
You will probably need to add more water, and you may want to add more soup, depending on your taste. Add the instant rice. Remember the rice will plump up, sort of ‘multiplies’ when cooked so make sure there is enough water for the amount of rice you put (see the directions on the box). Turn the crock pot back to high if it is on low.
Step4
Once the rice is done, the meal is ready. You can put the crock pot on warm, and enjoy your inexpensive, healthy chicken meal when you are ready!
